You are invited to hear Joseph C. Watso, Ph.D., speak on “Beet-ing Cardiovascular Aging” at the next Institute for Successful Longevity Brown Bag, today March 6.

In his talk, Dr. Watso will explain his research into consuming beetroot juice as a countermeasure for high dietary salt in older adults - a population at an increased risk of salt-sensitivity, hypertension, and cardiovascular disease.

Dr. Watso, Assistant Professor in FSU’s Department of Nutrition & Integrative Physiology and a Faculty Affiliate of the Institute for Successful Longevity, will take questions from the audience after his talk.
Nine-in-ten adults eat too much salt (i.e., sodium chloride). Excess salt intake raises blood pressure and cardiovascular disease risk - the leading cause of death worldwide. Most Americans do not follow optimal lifestyle patterns (e.g., reducing salt intake) because of time and effort. However, dietary nitrate supplementation is a convenient countermeasure for excess salt intake. For example, in rats and humans, daily nitrate-rich beetroot juice improves blood vessel function and lowers blood pressure.

Interestingly, a recent study in rats found that nitrate-rich beetroot juice prevented increases in blood pressure with salt loading. Thus, there is a scientific premise for dietary nitrate to counteract the cardiovascular consequences of high dietary salt in humans.

While young adults tend to have salt-resistant blood pressure (no change in resting blood pressure after dietary salt loading), older adults tend to have salt-sensitive blood pressure (increased resting blood pressure after dietary salt loading). Moreover, nearly four in five American adults over the age of 60 years old have high blood pressure (i.e., hypertension).
